Vegetable Bajra–Dal Khichdi
Ingredients:
2 tbsp bajra (pearl millet), soaked
2 tbsp yellow moong dal, soaked
1/2 cup bottle gourd (lauki), chopped
1/4 cup carrot, chopped
1/4 cup French beans / spinach / zucchini
1/2 tsp cumin seeds
1 tsp grated ginger
1/4 tsp turmeric
Pinch of asafoetida (hing)
Salt to taste
1/2 tsp ghee (optional)
2½–3 cups water
Instructions:
Wash and soak bajra and moong dal for 6–8 hours.
Add soaked bajra, dal, vegetables, ginger, turmeric, salt, and water to a pressure cooker.
Cook for 3–4 whistles until soft and well cooked.
Heat ghee in a small pan, add cumin seeds and hing, and pour over the khichdi.
Mix well and adjust consistency to a soft, porridge-like texture.
Serve warm as a light, nourishing meal for weight loss.
